Roast Rib of Hereford Beef
I recently teamed up with Irish Hereford Prime, a farmer run organisation dedicated to producing the highest quality certified Hereford Beef. I was asked to develop a recipe for a beautiful standing rib of beef. I had never cooked a standing rib before but, having eaten it many times in restaurants, knew that it is an exceptional cut. I decided to keep it very simple and very rare – just how I like it! I served it at room temperature with rosemary roast potatoes, sweet and sour carrots and rocket and walnut pesto.
